  • Decadence

    Decadence is a strong bourbon barrel aged stout that has a secondary maturation on raspberries and cocoa nibs. This dessert beer is served in 10 oz portions and is very rich and warming

  • Ole Redbeard Barleywine ’10

    This very strong winter ale is brewed once a year, a year in advance of our release date. Large amounts of malt and hops are married into a Barleywine “read wine strength” beer that when matured for drinking is smooth, slighty sweet and very warming.

  • Framboise

     

    This beer is our version of a very unique Belgian beer style brewed only in the Lambic region outside Brussels. Lambic beer is brewed without the addition of yeast. The beer is brewed then allowed to cool in open vats and yeast in the air inoculates the beer. These beers are always sour and long aged

    Fermentation takes 6 months to 2 years. At that point the lambic beer is poured as is, or blended with younger lambic and called guezue or fruit is added for a refermenation and some sweetness to balance the sour tart flavors.

    We brewed this beer over 3 years ago.  The first step was adding wild yeast. We did this  in an oak barrel. We pitched wild yeast and started fermentation. (This beer was brewed totally in non brewery area’s of The Brewhouse to make sure we did not infect our other beers).

    Fermentation started slowly after about 6 months it was going strong. We allowed the beer to ferment in the barrel for almost 2 years. We then moved to another barrel and added Raspberries. Another fermentation took place. This very rare and special beer is 3 years old. Strong notes of lactic, bitter sour aroma will come thru with a very tart flavor balanced slightly by the fruit.

     

  • Black Solstice Saison

    This Belgian style black saison

    Is brewed with pale malts and chocolate malts to add a dark color and cocoa like flavor.

    Belgian yeasts make strong ester fruity notes and the addition of crushed black peppercorns to the brew during fermentation . The resulting slight spiciness balances the dark flavors perfectly.

    German style wheat ale

  • Witchtree ESB

    English style pale ale served on nitrogen

  • Apricot Wheat

    A marriage of tangy wheat malt and sweet/tart apricot

  • Starfire Pale Ale 6.1%

    North Shore style hoppy pale ale.

  • Wildfire Lager

    Malty amber lager infused with ample amounts of Hatch chili’s from New Mexico.  Aroma’s of peppers with a very warm finish.

  • El Nino Double Hopped IPA 7.0%

    Big and Bold, copious amounts of 6 hop varieties, matched with a fullbodied pale ale.
